- 1-2 Leftover Lamb Shanks
- 2-3 Cups of Leftover Lamb Shank Vegetables
- 1 Cup Frozen Peas
- 2 Carrots
- 1/2 Bag Frozen Pearl Onions
- Mashed Potatoes or Cauliflower & Sweet Potato Mash
- Salt & Pepper
Break apart lamb shank, add it to some of the leftover vegetables it cooked with and place mixture in the bottom of a casserole dish.
I decided to sauté some some carrots and onions to go along with the peas since I didn't have much meat. If you just have peas, thats great too. This recipe is all about using whatever you have. Once the carrots are tender, add a little salt & pepper, 1/2 a bag of frozen pearl onions and about half a bag of frozen peas. Combine for a few minutes in the pan, add over the lamb mixture.
I had a few potatoes to use up so I decided to make mashed potatoes for the top layer. I like to use plenty of butter & salt. Normally I would make Cauliflower & Sweet Potato Mash but I didn't have any. The great thing about using what you have is always being able to create new and exciting meals.
Add a little extra juice from the lamb shank liquid to the top. Bake @ 350 for 40 minutes, or until top starts to brown & bubble
