I love this salad for any occasion. With Thanksgiving coming in a few weeks this is the perfect addition to any holiday meal. Tangy dressing, salty bacon, sweet cranberries, crispy pumpkin seeds and creamy goat cheese make this a salad worth getting up for seconds.
1/3 cup pumpkin puree. Canned or fresh
1/4 cup apple cider vinegar
2Tbs. maple syrup
1 tsp stone ground or dijon mustard
6 cups shredded kale
1/2 cup dried cranberries
1/4 cup roasted pumpkin seeds
1/4 cup goat or feta cheese
4-8 pieces cooked chopped bacon
In a screw top jar or bowl, combine oil, pumpkin, vinegar, maple syrup, mustard and a pinch of salt. Shake or mix well
Place kale in a bowl and add 2-3 Tbls of dressing. Massage kale until coated and softened. Add remaining salad toppings. Top with remaining dressing.
