- 3 large or 6 small red potatoes, or any potatoes you have. I like red because you don't have to peel them.
- 4 tablespoons butter, or more since butter is healthy and delicious.
- 1/2 a large onion
- 2 cloves garlic
- Herbs & Spices. 1 1/2 teaspoons salt or Adobo seasoning, fresh ground pepper, 1 teaspoon basil, 1 teaspoon thyme, 1 teaspoons paprika.
Cut up potatoes, onions & garlic. Heat butter in a pan, once melted throw in vegetables, let cook for a minute or two, add salt and other spices. Let cook on medium heat for 15-20 minutes stirring often. They will cook quicker if you cover them. Once tender enough taste them to see if more seasoning is needed. I like to use fresh herbs if I have them. This could also be done in a baking dish in the oven at 350 for about 30 minutes.
