- 3 Large Egg Yolks or 4 Small Egg Yolks
- 3-4 Tbls Butter
- 1-2 Tbls Water
- Dash White Pepper
- Dash Salt
- 1 Tbl Lemon
- Paprika for garnish
Simmer 1 Inch of water in a skillet. Always acidulate the poaching liquid with either vinegar or lemon juice (1 tsp per each cup of water). Nate actually uses pickle juice. Slide eggs gently into simmering water, cook 5-8 minutes depending on how runny you like the yolk.
Hash Browns n'Bacon
Cook 4 hash browns in a pan with 1 Tbl butter until golden brown. Cook bacon to your liking.
Arrange Hash Brown with a generous amount of bacon, followed by poached egg and hollandaise sauce. Garnish with paprika.
