The cauliflower and sweet potato taste wonderful together in this dish. I sometimes mix the two together if I am making a Shepherds Pie, but I often leave them separate to taste them individually and the kids love mixing it around themselves!
- 1 head of cauliflower
- 3-4 sweet potatoes
- Salt & Garlic powder or Goya Adobo Seasoning
- 1 stick of butter
Peel sweet potato, cut up into large chunks. Cut up cauliflower into large pieces. I like to steam the sweet potato and cauliflower separately until very soft. Boiling would work too but I like the texture and flavor better when steamed.
When sweet potato is done steaming toss it in a food processor with half a stick of butter and a few shakes of salt and garlic powder or Adobo. Add cauliflower to the same pot you steamed the sweet potato in, add a little more water if needed. Blend the sweet potato until desired consistency, nice and creamy smooth. Place sweet potato in serving dish.
Once cauliflower is steamed add it to the food processor/blender with half a stick of butter and a few shakes of salt & garlic powder or Adobo. Puree until creamy smooth. A hand masher would work but the consistency would not be as amazing. Place mashed cauliflower in the same serving dish and mix with sweet potato or serve separately.
I love this dish with ham & peas or over a shepherds pie. Sometimes I make just the mashed cauliflower or sweet potato separately if I don't have time to do both. Although together they are unbelievable! Just wait till you try it.
