I love pancakes, eggs & bacon on the weekends. Making them from scratch isn't that much harder than whipping out the Bisquick mix(which is loaded with hydrogenated oils and other crap you don't want in your body). These Almond Flour Pancakes are a healthy, grain free indulgence made with real ingredients. Go ahead, have another!!
- 3 Eggs
- 1/4 Cup Coconut Milk, Regular Milk, or Water
- 1 Teaspoon Vanilla Extract
- 1 Tablespoon Coconut Oil or Butter, Melted
- 1 Banana, Plus More For Serving
- 1 1/2 Cups Almond Flour
- 1/4 Teaspoon Salt
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Cinnamon
- 1 Cup Blueberries. Fresh or Frozen
- Butter or Oil For Skillet
Combine eggs, milk, melted oil or butter and mashed up banana. Then combine almond flour, salt, baking soda and cinnamon. Add wet ingredients to the dry ingredients and mix well. Over a medium hot skillet with plenty of melted butter, scoop some pancake batter to make the size you want. I like to use an ice cream scoop. Add a few blueberries on top. Once the pancake is nicely golden brown, flip to the other side. A few minutes on each side should be perfect. Serve with some extra bananas, butter and real maple syrup!
