- 1 Package thin bacon
- 3-4 Potatoes
- 1/2 teaspoon Salt, 1/2 teaspoon thyme, 1/2 teaspoon basil
- Olive oil
- 4 tablespoons ranch
- 1 teaspoon Sriracha Sauce
Preheat oven to 350. Peel & cut up potatoes into pieces small enough for about 1-2 bites and big enough to wrap a half a piece of bacon around. Boil potatoes for about 5 minutes so they are partially cooked but not falling apart. Drain potatoes, place back in pot, drizzle with a little olive oil, salt & herbs. Cut bacon in half, place each bacon slice down and roll up potato. Place bacon potatoes on a baking sheet. Cook for 30-35 minutes. While they are cooking prepare Sriracha ranch by mixing about 1 teaspoon or more of Sriracha into about 4 tablespoons of ranch dressing.
Let cool for a few minutes, then enjoy the Sriracha & bacon love.
