Nothing goes better with fried eggs and crispy bacon like some delicious homefries. I rarely go out to breakfast but whenever I order them at a restaurant they are never what Im expecting. Homefries always come served on my plate undercooked, overcooked, flavorless, mushy, or all of the above. This recipe has tons of flavor and just the right amount of crispiness that goes perfect with any breakfast dish.
There is nothing like a delicious hearty breakfast on a Sunday morning. I really love to take my time and enjoy cooking breakfast on the weekends. It usually involves bacon, but on this particular day I had some tender pieces of ham leftover from dinner the night before. Its great to use whatever leftovers you may have in the fridge to include with breakfast. I have used anything from a leftover burger, steak, meatloaf, or chicken added to omelets or on top of fried eggs. Being gluten free I usually don't eat a lot of bread with breakfast but I decided to make some delicious gluten free onion dill biscuits that are amazing at dinner time as well. On top of the biscuit i added some tasty sweet potato latkes, followed by sautéed kale and fried eggs. The combination of the salty ham, moist biscuit, sweet potato, delicious yolk, and crispy kale is out of this world. I like to call it my version of the classic eggs benedict since it would also be great topped with poached eggs and hollandaise. The options are endless! Enjoy!
