Gluten Free Onion Dill Biscuits Topped with Sweet Potato, Ham, Kale & Eggs
- I found this great biscuit recipe at one of my favorite gluten free blogs, Comfy Belly. The only change I made to the recipe was adding about 1/2 a tablespoon dried dill, fresh would be great too.
Sweet Potato Latkes
- 1 large or 2 small sweet potatoes shredded
- 1 egg
- Salt and garlic powder to taste
- 2 Tablespoons coconut oil
Shred the sweet potatoes, add the egg, salt and garlic powder and mix well. Heat coconut oil in a pan and form shredded sweet potatoes into flat pancakes. Cook on each side for 2-5 minutes. You can enjoy these with eggs for breakfast but they are also great for dinner!
- 1 small bunch of kale
- 2 tablespoons butter
- Salt & pepper to taste
Cut up bite sized pieces of kale and cook in a pan with butter until tender, 3-5 minutes.
When the biscuits, sweet potato latkes and kale are ready, cook eggs to your liking and add whatever meat you have on hand. I happened to use ham but I think my favorite meat to pair with this breakfast would have to be bacon or sausage. Get creative, thats what cooking is all about!
